class=\"ez-toc-section-end\"><\/span><\/h2>\n\n<p class=\"wp-block-paragraph\">The most common system in the food industry is the <strong>balanced coil<\/strong>: a transmitting coil generates a constant electromagnetic field, and two receiving coils, located on either side, maintain an equal and opposite signal as long as nothing passes through the tunnel. When a metallic particle passes through the field, it disrupts this balance and generates a signal that the system interprets as contamination, activating the rejection mechanism. <\/p>\n\n<p class=\"wp-block-paragraph\">Depending on the product format and the point in the line, three types of detectors are used:<\/p>\n\n<ul class=\"wp-block-list\">\n<li><strong>Tunnel detector (aperture)<\/strong>: the most common at the end-of-line. The product\u2014packaged or in a box\u2014passes through a rectangular opening while moving on the conveyor belt. <\/li>\n\n\n\n<li><strong>Pipeline detector<\/strong>: installed for pumped products, such as minced meat or sausage emulsion, before packaging.<\/li>\n\n\n\n<li><strong>Plate or sheet detector<\/strong>: detects metallic fragments in flat raw materials before they enter cutting or mincing machines, anticipating the problem in earlier stages of the process.<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\">Current equipment distinguishes between ferrous metals (iron, steel), non-ferrous metals (aluminum, copper), and stainless steel\u2014the latter being the most difficult to detect due to its low conductivity, and also the material from which most blades and components of meat machinery that could fragment are made.<\/p>\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Why_it_is_a_Critical_Control_Point_CCP_in_the_HACCP_Plan\"><\/span>Why it is a Critical Control Point (CCP) in the HACCP Plan<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n<p class=\"wp-block-paragraph\">The Hazard Analysis and Critical Control Points (HACCP) system, mandatory in the EU according to <a href=\"https:\/\/eur-lex.europa.eu\/legal-content\/ES\/TXT\/?uri=CELEX%3A32004R0852\">Regulation (EC) 852\/2004<\/a>, requires identifying and controlling physical, chemical, and biological hazards at each stage of the process. Contamination by metallic fragments\u2014resulting from wear of blades, screws, or moving components\u2014is considered a significant physical hazard in any meat processing plant. <\/p>\n\n<p class=\"wp-block-paragraph\">When the hazard analysis concludes that this risk is significant, metal detection becomes a CCP: a point in the process where control is not optional, but mandatory to ensure product safety, with documented records of each verification.<\/p>\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Where_to_Place_the_Metal_Detector_at_the_End-of-Line\"><\/span>Where to Place the Metal Detector at the End-of-Line<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n<p class=\"wp-block-paragraph\">The recommended location is <strong>as close as possible to the end of the process<\/strong>, just before the product is sorted and ready for dispatch: the later the control is placed, the lower the risk of metal being incorporated after inspection.<\/p>\n\n<p class=\"wp-block-paragraph\">In practice, this means integrating the metal detector into the same section where each box is already identified, its batch verified, and directed to its logistical exit. If the detector operates as an isolated machine, disconnected from the <a href=\"https:\/\/maquinariacarnica.com\/en\/automatic-case-sorting-with-integrated-traceability\/\">automatic box sorting<\/a> system and <a href=\"https:\/\/maquinariacarnica.com\/etiquetado-automatico-trazabilidad-lotes-industria-carnica\/\">automatic labeling<\/a>, each rejection requires manual intervention that disrupts the line&#8217;s rhythm. Integrated, however, the system itself automatically diverts the rejected box to a separate exit without stopping the rest of the flow.  <\/p>\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Verification_and_Calibration_What_Private_Regulations_Require\"><\/span>Verification and Calibration: What Private Regulations Require<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n<p class=\"wp-block-paragraph\">In addition to HACCP, most large distributors require compliance with private food safety standards\u2014mainly <strong>IFS Food<\/strong> and <strong>BRC Food<\/strong>\u2014which detail how the metal detector must be verified:<\/p>\n\n<figure class=\"wp-block-table\"><table class=\"has-fixed-layout\"><thead><tr><th><strong>Element<\/strong><\/th><th><strong>Typical Frequency<\/strong><\/th><\/tr><\/thead><tbody><tr><td>Test with reference spheres (ferrous, non-ferrous, stainless steel)<\/td><td>At the beginning and end of each shift, and with each product change<\/td><\/tr><tr><td>Certified calibration by an accredited technician<\/td><td>At least once a year<\/td><\/tr><tr><td>Retention of verification records<\/td><td>Minimum 12 months (IFS\/BRC)<\/td><\/tr><\/tbody><\/table><\/figure>\n\n<p class=\"wp-block-paragraph\">Each verification with test spheres must be recorded: if the detector does not reject the reference sphere, the line must be stopped and the product manufactured since the last correct verification must be reviewed.
